That Time We Made Bread



I'm not a baker. I'll just level with you. I love to cook, but baking, not so much. But I saw this recipe that my amazing baker friend (and author!!!) posted. It seemed "easy enough". That is, until I started it, haha! It really isn't difficult. I shouldn't say that. I guess I just didn't realize how many steps there are to making bread. And just how much the dough has to be left. But not for too long. We accidentally let ours rise for far too long there at the end. We prepared it, then let it sit while we went to a birthday parade and boy oh boy did it get ginormous. That didn't affect the flavor at all though. And I have to say, I felt rather accomplished with Connor and I for doing this. And I feel like our friend Bonnie would be proud because we weighed out all the ingredients instead of measuring...even if all we had was a salt grinder and had to grind up 20 grams of salt. Connor and I had to take turns with the salt grinder for all that salt! And doing something like this with only one kid that can do most the steps by himself is also pretty dang awesome. 





Just look at that HUGE loaf! I braided it because we don't have any loaf pans. I accidentally let it sit for twice as long as it needed and it certainly got big.

Blueberry Applesauce Muffins



Let me tell you a little story. On Monday, a neighbor stopped by to see if Connor wanted to come over and play. The dad asked what we were up to and I replied, "baking". I asked Ian to pick Connor up from the neighbor's house on his way home from work. Well, apparently when the dad told Ian that we were baking, Ian made sure to let him know that doesn't normally happen in our house. Way to shatter the image of Jessica the baker, Ian! 

Anyway, I have made applesauce muffins in the past and none have ever turned out very good. They have generally turned out rather tasteless because of the lack of unhealthy ingredients sugar. This time I added blueberries to them which made them mighty tasty and they were quite moist too. So, here's the recipe. It's an easy one too.

Ingredients:
1.25 cups flour
1.25 cups of rolled oats
1 tsp baking powder
.5 tsp baking soda
.5 tsp cinnamon
1 cup applesauce
.5 cup plain greek yogurt
.5 cup brown sugar
2 tbsp olive oil
1 egg
.75 cup blueberries (I used frozen)


Directions:

  1. Preheat your oven to 375 degrees
  2. Mix all your ingredients together, except for the blueberries
  3. Once mixed, stir in the blueberries
  4. Oil your muffin pan, or use liners
  5. Divide the batter between 12 muffin cups
  6. Bake for 14-16 minutes; use a toothpick to check if they are done, which is when the toothpick comes out clean from the muffin
  7. Enjoy!

We ate them all within two days, but they stayed super fresh and moist for both days. Callum especially loved them...and so did I.

Christmas Cookies

With Christmas being a week away, I have kind of hit crunch time for fitting in all the Christmas related activities I want to do with the kids. With Isla napping (sorry girl, you always seem to miss out), Connor and I hit the kitchen and made some cookies.








I made the actual cookies, then let Connor help me cut them out and he was fully able to control the decorating...you never would have guessed by looking at the cookies, I know!


Though it's hard to tell, Connor actually took his cookie decorating pretty serious. After dumping a jar of sprinkles on each cookie, he would use his little finger to try to spread out the mess he made. And him pushing the red hots pretty much all the way through the cookie was pretty much adorable. Of course, many "normal" things he does I find irresistible. I am his mother, after all!


^^ Just when I went to take a picture of Connor and (some of) his cookies, he totally started eating the red hots off the cookies! Talk about being caught red handed!

Since we really don't need any more sweets laying around the house, I decided to bag up the cookies to give to our neighbors as gifts...after the kids each got a cookie.

And, well, I now think I need to make another batch of cookies and let Isla in on the fun. Plus, it means more love for the neighbors...it's always a good thing to be on your neighbors good side!
